How do I cut a knitted garment?

hi, wonder if might able me? have shop-bought dress i'd shorten @ bottom first cutting , sewing new hem. dress hand knitted out of merino wool , of hand knit-style/large loose knit weave. cut dress @ bottom (cutting away existing hem) without causing knitting unravel. how should go doing this? should sew length of running/back stitches above want cut if making steek? if so, should 1 row of stitches, rather 2 parallel horizontal rows space between them, since want cut away of fabric @ bottom of garment , don't intend use cutaway piece? also, kind of hem/hem stitch might dress of kind of heavy loose large knit fabric?
