Taxes on top of taxes paid on expenses?

i'm little new this, reason cannot remember being taught how taxes work in high school. mean taught they're not how file them or pay them. clear because i'd start working & maybe own place.

know people save receipts keep records of expenses. question is, when tax season comes, supposed pay more money government aside has been taken out of check & dollars when purchase something? how supposed know how owe? supposed save this?
