Gratuity for waiter or waitress?

line on credit card slip says tip given waitperson.
restaurants have policy of charging waitperson 2% or whatever establishment gets charged credit card company process charge. sure person not being charged % sure getting intend best leave cash. if can not credit card best way go if other option leave nothing or less should leave.

when leaving gratuity service received, , making part of total bill put on debit card, how know server got correct amount?
