Punjabi/Indian sweet dishes or desert?

ukadiche modak

need:

covering:
½ cup rice flour
½ cup water
2 tsp ghee
pinch of salt

filling:
1 cup coconut, shredded
½ cup jaggery, grated
1 tsp poppy seeds, roasted
1 tsp cardamom powder

how proceed:

filling:
1) heat pan , put jaggery in
2) when jaggery starts melting, add 1 tsp ghee , coconut
3) mix , cook on medium heat 5-6 mins
4) add cardamom powder , roasted poppy seeds
5) filling ready, keep aside cool

covering:
1) boil ½ cup water, add ghee
2) add rice flour boiling water , miz stirring continuously
3) add salt, mix , cook covered 2-3 mins
4) remove heat , knead soft flour when hot
dough called ukad , hence name!

putting together:
1) divide dough small balls
2) roll each ball size of puris
3) place on palm , add filling
4) bring ends in form of plates , form tip , seal
5) repeat procedure rest of modaks
6) put these modaks in steamer/cooker (do not put weight/whistle) , steam 15-20 mins. abobe ingredients make 7-8 modaks
7) serve hot modaks ghee… aahh.. melt in mouth.. oops.. did forget offer naivedya/prasad?? ;)

ngredients:
4 cups ready made yogurt or yogurt made 1.5ltrs of milk
1/2 cup sour cream (optional)
2 cups sugar
1/2 cup coarsely powdered almonds
1/4 tea spn cardamom powder
7-8 strands of saffron soaked in 1 tbl spn warm water
method:
take clean muslin cloth , take yogurt in it. tie knot , hang water falls away yogurt. leave overnight or 12hrs. remaining dry yogurt called hung yogurt.
in bowl mix hung yogurt, sour cream, sugar. mix well.
add saffron, cardamom nice saffron color. add almonds. serve puris.

puran poli

ingredients:
• 1 cup chana daal/ split bengal gram (see link picture below)
• 1 cup small jaggery pieces
• 1 cup self-raising flour
• 2 tbsps vegetable/ canola/ sunflower cooking oil
• 1/2 tsp cardamom powder
• ghee rub on cooked puran poli (see recipe ghee below)
preparation:
• wash chana daal thoroughly , soak overnight in warm water.
• cook chana daal little water, till soft , paste-like (a pressure cooker makes short work of this!).
• simmer flame, make sure water has dried. add jaggery pieces , stir continuously till melt , mixed chana daal paste.
• add cardamom powder paste , blend well. remove fire , keep aside later use.
• put self-raising flour in large mixing bowl , make in center. add little water , oil well. use fingers knead smooth, medium-firm dough, adding more water required.
• divide dough equal portions , roll smooth, seam-free balls.
• clean , flour rolling surface. take 1 ball of dough , flatten fingers. roll out 3-4" circle. spoon of chana daal-jaggery paste center of circle. fold edges of circle on paste , pinch seal.
• flatten new ball gently fingers , use rolling pin , gentle, circular pressure roll out 5-6" circle. dough , chana daal-jaggery paste.
• heat griddle till hot, on medium flame. place 1 rolled out circle on , cook till tiny bubbles appear on upper surface. flip spatula now. cook till small brown dots begin appear on lower surface , flip again. puran poli begin give of lovely cooked aroma now. remove fire , smear on either side ghee. keep in heatproof container later or eat right away dollop of cream!
